Venison Breakfast Sausage
Breakfast sausage is basically ground meat and sausage seasonings (which you probably already have in your spice rack). This is a simple recipe, using just a pound of ground venison, and a few spices. You can make this recipe hot and spicy (copycat Jimmy Dean’s Spicy Sausage), or mild (copycat Jimmy Dean’s Regular Sausage), depending on the amount of cayenne and red pepper flakes. This homemade venison breakfast sausage recipe is excellent for sausage patties, breakfast sandwiches, breakfast burritos, or breakfast pizza. This venison recipe can be used with different types of sausage meats like ground venison, ground pork, ground beef, ground turkey, or any other ground meat of your choice.
Making Breakfast Sausage is Easier than You Think!
You can get ground sausage meat from a local butcher, however, our butcher charges an additional $2.90 per pound. Now I’m frugal and also lazy, and to me it is worth saving the money to add the seasoning myself. Sometimes, I even create my own “seasoning packets” and prep the seasoning in a small jar so that I can dump and go on Saturday mornings. (I also do this with my homemade taco seasoning.)
Venison has Less Fat and is Healthier than Pork
You’ll need a defrosted pound of ground deer meat, and a large mixing bowl. Just mix the seasoning with the ground game meat, and form into patties. Venison is a lean meat, and some people prefer venison sausage to have the addition of pork fat or pork meat (like ground pork butt or pork shoulder). One easy way to add some fat to the sausage, is to cook some bacon as a side dish to your wild game sausage, and then add the bacon grease to the homemade sausage meat mixture. (Pro Tip: my favorite lazy Sunday morning bacon hack is to lay it on a cookie sheet, and cook it in the oven for about 20 minutes at 350.) However, adding fat or pork trimmings to the sausage mixture is not necessary for delicious sausage. Our butcher adds 30% ground beef to our ground venison mix, so I do not add any other meat or fat to my homemade sausage. Most people who add ground pork to their sausage add 20%, while I would limit bacon fat to 10% (and reduce the added salt in the recipe). This fresh sausage recipe is the perfect way to enjoy making your own sausage, while utilizing the health benefits of harvesting wild game.

Another way to incorporate health benefits of gardening, is to harvest your own venison sausage spices from your herb garden. Many people are unaware of the number of chemicals, preservatives, and pesticides applied to herbs and produce. In fact, studies have shown that those who garden live on average 4 years longer than those who don’t!
Make Extra for Breakfast on the Go
This recipe can easily be doubled to create 2 pounds of sausage, which can then be cooked and divided and stored in a freezer bag for a quick, grab and go deer sausage breakfast sandwich. (This is part of the reason why I think this is one of the best venison sausage recipes.) A couple of minutes in the air fryer or microwave, a slice of cheddar cheese, eggs, and a leftover biscuit (recipe link) creates a great sausage breakfast that will fill your belly until lunch! You could also package leftover venison sausage with a couple of pancakes in a ziplock, and freeze for a quick breakfast from the air fryer. This is a great way for the deer hunter in the family to enjoy their harvest on their next hunting trip!

- 1 pound ground venison
- ¼ tsp salt
- ¼ tsp sage
- ¼ tsp black pepper
- ¼ tsp coriander
- ½ tsp cayenne ((use ⅛ tsp for mild sausage))

Instructions
Mix seasoning with ground meat
Form into patties and cook (I do 6 smaller patties), or fry mixture and chop for breakfast burritos or biscuits and gravy.
