Ingredients

  • 3 Apples (Granny Smith are a good choice)
  • 1/2 cup Brown Sugar
  • 1 tablespoon freshly squeezed Lemon Juice
  • 2 tablespoons Cinnamon
  • 1 cup Flour
  • 3/4 cup Sugar
  • 1 teaspoon Baking Powder
  • A pinch of Salt
  • 2 tablespoons Cinnamon divided
  • 1/3 cup Butter melted, divided
  • 1 Egg

Instructions

  • Preheat oven to 350°F.

  • Peel the apples, if you like. They are fine peeled or unpeeled.

  • Core the apples. Chop into small cubes. Apple chunks should be no smaller than 1 inch (or they will get too mushy when cooking).

  • Place apples into a large bowl.

  • Add brown sugar, lemon juice and 1 tablespoon cinnamon. Toss until apples are well-coated.

  • Pour apple mixture into an oven-safe 8 1/2 x 12-inch casserole dish.

  • In a small bowl, mix flour, sugar, baking powder, salt and 1 tablespoon cinnamon.

  • Add egg and about 1/2 of the butter.

  • Spread mixture evenly over top of apples.

  • Sprinkle remainder of the butter on top of the crisp.

  • Cover dish with foil.

  • Bake at 350°F for 30 minutes, or a bit more until deep golden brown and bubbling.

FAQs

What are the best apples to use for apple crisp? ›

The firm and crisp Granny Smith and Honeycrisp varieties are popular apples to use in apple pies and apple crisps.

How do you keep apple crisp from getting soggy? ›

You need to use flour and baking powder to help turn the juices from the apples into a thickened sauce. By following this recipe, you'll avoid having a runny apple crisp.

Why is my apple crisp topping dry? ›

Not enough butter, and your topping will be a dry, floury mess. Too much butter and your topping will become a greasy blob or disappointingly soggy. Some recipes will ask you to cut in cold butter along with your dry ingredients, resulting in pea-size pieces that are sprinkled across the hot fruit filling.

Why isn't my apple crisp crispy? ›

Just make sure you add enough melted butter to coat everything: it brings it all together. Your day-old mush will turn back into the warm and crunchy crisp once more if you reheat in the oven at 350°. And for the love of autumn, please do not forget the ice cream. Or the whipped cream.

Which apples stay crisp the longest? ›

Storage quality also varies by cultivar. The best apples to store long-term have thick skin and tend to be crisp and tart. Apple varieties such as Gala, Granny Smith, Fuji, McIntosh, Winesap, Honeycrisp, Northern Spy, and Rome are known to store very well given the proper conditions.

What's the difference between apple crumble and apple crisp? ›

Like an apple crisp, an apple crumble is a baked fruit dessert with a layer of topping. But unlike the crisp, the crumble topping rarely includes oats or nuts. Instead, a crumble's topping is more like streusel, made with flour, sugar and butter.

Should you refrigerate apple crisp before baking? ›

You can prepare the crisp through step 3, then cover and refrigerate for up to 1 day before baking. You can also freeze the unbaked crisp for up to 3 months. Allow to thaw overnight in the refrigerator, then continue with step 4. Bake time will be a little longer since the crisp will be cold.

Can I cut apples the night before for apple crisp? ›

We prefer to prep the apples when we make the crisp, but you can prep them ahead of time. Peel and slice the apples and toss them with lemon juice, then pack tightly in freezer bags and refrigerate for up to one day.

How do you thicken apple crisp filling? ›

One common method is adding a bit of cornstarch or flour to your apple mixture before baking. This helps absorb some of the juices and thickens things up. Another tip is to let the apple crisp sit a bit after taking it out of the oven; as it cools, the filling will naturally thicken a bit.

What is the secret to good crumble? ›

❓FAQ
  • Use cold butter. This will help to create a crumbly texture that will not stick together when baking.
  • Use a mix of flour and oats. The oats will add a bit of crunch and texture to the topping.
  • Don't overmix the ingredients. The crumble topping should be made with a "coarse" crumb.

How do you know when apple crisp is done? ›

Bake the apple crisp until the fruit is bubbling and the topping is golden brown and crisp, about 45 minutes. Serve the crisps warm with vanilla bean ice cream or fresh whipped cream, if desired.

What happens if you put too much butter in crumble? ›

If you use more butter than the recipe calls for, the crumb topping will be melted and greasy. If you don't use enough butter it will be dry and floury.

Why are my apples mushy in my apple crisp? ›

Picking the wrong apples

Softer apples like Red Delicious, Golden Delicious, or Macintosh break down too much in the heat of the oven, basically turning into applesauce. So avoid those, and opt for a variety that's firm and crisp like Granny Smith, Fuji, Gala, or Honeycrisp.

What is the crispiest crunchiest apple? ›

Stemilt Growers,

Some may attest that Honeycrisp and Pink Lady® are the crunchiest, while others would shake their heads pointing to Cosmic Crisp® and SweeTango.

How to prevent watery apple crisp? ›

The best way to prevent a watery apple crisp is to use a thickener in the filling – some recipes use flour, but I've chosen to use cornstarch in this recipe (or arrowroot starch, which can be substituted 1:1 for cornstarch) because I think it provides superior thickening power.
