Eggs and Greek yogurt are 0 points on WW and you can make this egg salad very low in points and flavorful by using fresh herbs and whatever spices you have in your pantry. I chose to use dill because that just pairs well with greek yogurt and some chives. There are few different kinds of low point bread options out there. My favorite is Village Hearth Light Italian bread and I also like to use Joseph's pita bread.

Perfect Hard Boiled Eggs

I've got the perfect recipe here and people can't believe how easy it is to cook hard boiled eggs now. They are super easy to peel and won't take a long time to make. Of course you can always make hard boiled eggs in the Instant Pot.

Don't have an air fryer? Well, there are lots of different methods for getting a hard-boiled egg done and you can even buy them cooked in the store.

Ingredients Needed

  • Eggs, hard boiled - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
  • Greek yogurt can sub fat-free mayo - is considered great for a variety of reasons. It is typically higher in protein and lower in sugar than regular yogurt, making it a good choice for those looking to maintain a balanced diet.
  • Dried dill is a spice made from the leaves of the dill plant that have been dried and then crushed or ground into a powder.
  • Chives - scallions are a good substitute for chives
  • Onion powder is dehydrated, ground onion that is commonly used as a seasoning. Some people do not like the taste of freshly chopped onion so onion powder is a great substitute if you have a picky eater like that in your house.
  • Garlic powder is made from dehydrated garlic cloves and like the chili powder above it gets pulverized into a powder or flour consistency.
  • Kosher salt and freshly ground black pepper, to taste
  • Additional ingredients: avocado (spread it on the sandwich), lemon juice, dijon mustard, diced pickles, red onion, fresh parsley, capers, or bacon.
  • Add lettuce and tomatoes for toppings if you make a sandwich.
  • Instead of bread use crackers or pita bread

Instructions for Egg Salad


Step 1: Make some hard-boiled eggs with whatever cooking method you like. For my air fryer method, I set the temp to 250 and cooked them for 16 minutes. Then I put them in an ice water bath to stop the cooking.

Step 2: Chop your eggs up and add them to a medium bowl. Then add the next 7 ingredients. Mix well to combine. Serve on top of bread or warmed up pita.

  • ¼ teaspoon onion powder
  • 2 tsp of garlic powder
  • Kosher salt and freshly ground black pepper, to taste
